Family Friendly Butter Chicken

Fast, fuss-free, and kid-approved.
This is one of those recipes that just works on a busy night, minimal prep, everything goes in the blender, and the kids happily clean their plates. It’s one of my favourites to make during Phase 2 (Flow & Flex) or Phase 4 (Rest & Reflect) of the cycle, when you want something warm, comforting, and easy on your nervous system.
🛒 Ingredients
500g chicken breast or thighs
1 x 400g tin of chopped tomatoes (any flavour will do)
1 tbsp onion powder
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
1 tsp ground cumin
1 tsp ground coriander
2 tsp curry powder
2 tbsp honey
2 tbsp nut butter (I use peanut butter because it’s always in the pantry)
¼ cup plain yogurt or cream
👩🍳 Method
Dice the chicken into bite-sized pieces.
Fry the chicken in a hot pan with a splash of olive oil until it’s fully cooked and slightly golden.
Blend the sauce: While the chicken cooks, add all the remaining ingredients into a blender (I use a Ninja) and blitz until smooth.
Combine & simmer: Pour the sauce over the cooked chicken, reduce the heat, and simmer gently for 5–10 minutes.
Serve with steamed rice or green veggies , or just eat it on its own like i do.
💭 Why I Love It
It’s warm, filling, and flexible. Perfect for that phase of your cycle when you’re either bouncing back or winding down and craving comfort. You’re still fuelling your body well, just doing it in a way that’s easy, satisfying, and makes life a little less chaotic.
